  • 1/2 cup water, plus more as needed

Instructions

  1. Brown the Beef: In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Add diced onion and cook until softened.
  2. Add Seasonings: Stir in garlic, tomato sauce, cumin, oregano, chili powder, salt, and cayenne pepper. Pour in water, reduce heat, and simmer for 1 hour.
  3. Thicken the Chili: Mix masa harina with water to form a slurry. Stir into the chili along with beans. Simmer for 10–15 minutes.
  4. Adjust and Serve: Taste the chili, adjust seasoning if needed, and serve hot with desired toppings.

  • You can substitute cornmeal for masa harina if needed, though it may alter the texture slightly.
