Instructions

  1. Prepare the Dough: In a large bowl, combine mashed potatoes, flour, salt, and oil. Mix until a soft, non-sticky dough forms. Add a bit more flour if the dough is too wet. Turn the dough out onto a floured surface and gently knead for 1–2 minutes. Cover and let rest while making the filling.
  2. Cook the Filling: Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 3–4 minutes. Add shredded cabbage, salt, pepper, and caraway seeds if using. Cook for 8–10 minutes, stirring occasionally, until the cabbage is soft and lightly golden. Remove from heat and stir in shredded cheese. Let the filling cool slightly.
  3. Shape the Rolls: Divide the potato dough into 8–10 equal pieces. Roll each piece into a ball, then flatten into a 4–5 inch circle. Place a spoonful of the cabbage and cheese filling in the center of each circle, then fold over and pinch edges to seal into a half-moon or round shape.
  4. Cook the Rolls: Heat a nonstick skillet or griddle over medium heat and lightly grease it. Cook the rolls for 3–4 minutes per side, until golden brown and crispy. Serve warm.
