Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Dry the chickpeas: Spread the chickpeas in a single layer on the baking sheet and bake for 5 minutes to help them dry out.
  3. Coat with oil and seasoning: Remove from the oven and toss with olive oil until evenly coated. Sprinkle with ranch seasoning and smoked paprika if using, then toss again.
  4. Bake: Spread chickpeas back into a single layer and bake for 25–30 minutes, shaking the pan halfway through, until golden brown and crispy.
