Scale
Main Ingredients
- 1 large cucumber, peeled and chopped
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1/2 cup honey or granulated sugar (adjust to taste)
- 4 cups cold water
- 1 cup ice
Optional Garnishes
- Lemon slices
- Cucumber ribbons
- Fresh mint leaves
Instructions
- Blend Ingredients: In a blender, combine the peeled and chopped cucumber, freshly squeezed lemon juice, and honey or granulated sugar. Blend until the mixture is smooth and well combined.
- Strain the Mixture: Pour the blended mixture through a fine mesh strainer into a large pitcher. Use a spoon or spatula to press the pulp to extract as much liquid as possible, leaving behind the solid fiber for a smoother lemonade.
- Add Water and Sweeten: Add the cold water to the strained lemon-cucumber juice and stir well to combine. Taste the lemonade and adjust the sweetness by adding more honey or sugar if needed.
- Chill and Serve: Add the ice cubes to the pitcher and refrigerate the lemonade until well chilled. Serve in glasses over ice, garnished with optional lemon slices, cucumber ribbons, and fresh mint leaves for a refreshing presentation.
Notes
- For a sparkling twist, replace 1–2 cups of cold water with chilled club soda to add effervescence.
- Freeze leftover lemonade in popsicle molds for a delicious and cooling summer treat.
