Potatoes:

  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Baked Feta Mixture:

  • 1 block (8 oz) feta cheese
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat oven to 425°F.
  2. Prepare Potatoes: In a large mixing bowl, toss halved potatoes with olive oil, oregano, smoked paprika, salt, and pepper until evenly coated.
  3. Roast: Spread potatoes on a baking sheet. Place feta block in the center, sprinkle garlic over potatoes and feta. Roast for 25–30 minutes, stirring halfway through, until golden and tender.
  4. Combine: Mash softened feta with garlic. Toss potatoes with feta mixture until coated.
  5. Serve: Garnish with fresh parsley before serving.
