Potatoes:
- 2 lbs baby potatoes, halved
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Baked Feta Mixture:
- 1 block (8 oz) feta cheese
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat oven to 425°F.
- Prepare Potatoes: In a large mixing bowl, toss halved potatoes with olive oil, oregano, smoked paprika, salt, and pepper until evenly coated.
- Roast: Spread potatoes on a baking sheet. Place feta block in the center, sprinkle garlic over potatoes and feta. Roast for 25–30 minutes, stirring halfway through, until golden and tender.
- Combine: Mash softened feta with garlic. Toss potatoes with feta mixture until coated.
- Serve: Garnish with fresh parsley before serving.
Notes
- For extra flavor, squeeze fresh lemon juice over the finished dish.
- This recipe can also be made with fingerling or Yukon gold potatoes for variation.
