Description

Savory Egg Roll Soup Delight is a comforting and flavorful soup inspired by classic egg roll ingredients. Ground pork is browned and sautéed with aromatic garlic and ginger, combined with shredded cabbage, carrots, and optional mushrooms, then simmered in a rich chicken broth enhanced with soy sauce and sesame oil. This easy-to-make soup delivers all the deliciousness of an egg roll in a cozy, warm bowl perfect for any occasion.

Ingredients

Scale

Meat

  • 1 lb ground pork (can substitute with ground chicken or turkey)

Vegetables

  • 2 cups shredded cabbage (green cabbage or napa cabbage)
  • 1 medium carrot, julienned or grated
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced or grated
  • 1/2 cup sliced mushrooms (optional)
  • 2 stalks green onions, chopped (for garnish)

Liquids & Oils

  • 4 cups chicken broth (or vegetable broth for a vegetarian option)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon toasted sesame oil (adds a rich, nutty flavor)
  • 1 tablespoon olive oil (for sautéing)

Seasonings

  • 1 tablespoon rice vinegar (optional for extra tang)
  • 1/4 teaspoon red pepper flakes (optional for some heat)
  • Salt and pepper, to taste

Instructions

  1. Cook the Ground Pork: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the ground pork and cook, breaking it up into small pieces with a spoon, until browned and cooked through, about 5 to 7 minutes.
  2. Sauté the Aromatics: Add the minced garlic and ginger to the pot with the pork. Sauté for about 1 minute, or until fragrant, stirring frequently to prevent burning.
  3. Add the Vegetables: Stir in the shredded cabbage, julienned carrots, and sliced mushrooms if using. Cook for another 3 to 4 minutes until the cabbage starts to soften but still retains some crunch.
  4. Add the Broth and Soy Sauce: Pour in 4 cups of chicken broth and 3 tablespoons of low-sodium soy sauce. Stir well to combine all ingredients. Bring the soup to a simmer and let it cook for 10 to 12 minutes to allow all the flavors to meld together.
  5. Season the Soup: Taste the soup and adjust seasoning with salt and pepper. Add optional 1 tablespoon rice vinegar for tang or 1/4 teaspoon red pepper flakes for some heat according to your preference.
  6. Serve: Ladle the hot soup into bowls and garnish with chopped green onions. Optionally, drizzle with a little extra toasted sesame oil for enhanced flavor. Serve immediately.

Notes

  • For a lighter option, substitute ground chicken or turkey for the pork.
  • Use vegetable broth and omit meat for a vegetarian version.
  • Adjust spice level by adding more or less red pepper flakes.
  • To deepen flavor, let the soup simmer longer on low heat.
  • Serve with steamed rice or crusty bread for a filling meal.
