For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground lamb
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 4 cups low-sodium beef broth
  • 1 cup frozen peas
  • 2 cups potatoes, peeled and diced
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste

For Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the ground beef or lamb and cook until browned, about 6 to 8 minutes. Drain excess fat if needed.
  2. Add the onion, garlic, carrots, and celery, and sauté for another 5 minutes until the vegetables are soft.
  3. Stir in the thyme, rosemary, tomato paste, and Worcestershire sauce, cooking for 1 to 2 minutes.
  4. Pour in the beef broth and diced potatoes, and bring the soup to a boil.
  5. Reduce heat and simmer for 20 minutes, or until potatoes are fork-tender.
  6. Stir in the peas, heavy cream, and butter, and simmer for another 5 minutes until the soup is creamy and well blended.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley if desired.

Notes

  • For extra richness, mash some of the cooked potatoes directly in the soup.
  • You can use half-and-half instead of heavy cream.
  • Ground turkey or chicken also works well as a leaner option.
