Ingredients
Scale
Protein
- 8 oz (250g) cooked chicken breast, shredded or chopped
Vegetables
- 2 1/2 cups cauliflower florets
- 1 carrot, chopped
- 1 small onion, chopped
- 1 1/2 tablespoons ginger, grated
- 2 garlic cloves, minced
Spices and Herbs
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1 teaspoon dried mint
- Salt, to taste
- Additional black pepper, to taste
Liquids and Oils
- 3 cups chicken broth (or water)
- 2 tablespoons olive oil
Instructions
- Sauté aromatics: Heat 1 tablespoon of olive oil in a pot over medium heat. Add the chopped onion, minced garlic, turmeric, and black pepper. Sauté the mixture for 2 to 3 minutes until the onions become translucent and the spices release their aroma.
- Cook cauliflower: Add the cauliflower florets and 2 cups of chicken broth (or salted water) to the pot. Cover and cook for about 7 minutes, allowing the cauliflower to become tender.
- Add remaining vegetables: Stir in the grated ginger, dried mint, and chopped carrot. Continue cooking for another 5 minutes, or until the carrot softens.
- Blend: Using an immersion blender, partially blend the soup until it thickens slightly but still retains some texture.
- Add chicken and simmer: Stir in the shredded cooked chicken breast. Season with salt and additional black pepper to taste. Add the remaining 1 cup of chicken broth or water, then simmer the soup for 5 to 6 minutes to allow the flavors to meld together.
- Serve: Before serving, drizzle the soup with the remaining 1 tablespoon of olive oil for added richness and flavor.
Notes
- You can substitute chicken broth with vegetable broth for a different flavor profile or to make it vegetarian (omit the chicken then).
- The soup can be partially blended to keep some texture, or fully blended for a smoother consistency depending on preference.
- Adjust seasoning with salt and pepper to your taste increments after blending and adding the chicken to avoid overseasoning early.
- This recipe can be doubled easily for larger servings.
- Finished soup pairs well with crusty bread or a light salad for a complete meal.
