For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime

For the Fajitas:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1/2 tablespoon olive oil
  • 8 small flour or corn tortillas
  • Optional toppings: sour cream, avocado, cilantro, lime wedges

Instructions

  1. Marinate the Shrimp: In a large bowl, toss the shrimp with 1/2 tablespoon olive oil, chili powder, cumin, paprika, garlic powder, cayenne pepper, salt, and black pepper. Set aside to marinate for 10 minutes.
  2. Sauté Vegetables: Heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onion, and sauté for 5-6 minutes until slightly softened and charred. Remove vegetables from the skillet and set aside.
  3. Cook the Shrimp: Add the shrimp to the same skillet and cook for 2-3 minutes per side until pink and cooked through. Return the vegetables to the skillet with the shrimp and squeeze lime juice over the top. Stir to combine and heat through for 1 more minute.
  4. Serve: Warm the tortillas and serve the shrimp mixture with optional toppings.

Notes

  • You can substitute chicken or steak for shrimp if desired.
