  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon onion powder
  • Optional: fresh herbs and lemon wedges for garnish

Instructions

  1. Prep the Chicken: Pat chicken thighs dry with paper towels and season both sides evenly with salt, pepper, garlic powder, paprika, thyme, and onion powder.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down in the skillet and sear without moving for 6–7 minutes until the skin is golden brown and crisp.
  3. Cook the Chicken: Flip the chicken, reduce heat to medium, cover with a lid, and continue cooking for 15–18 minutes or until the internal temperature reaches 165°F (74°C).
  4. Rest and Serve: Remove the lid for the last few minutes to allow any remaining liquid to reduce. Let the chicken rest for 5 minutes before serving. Garnish with fresh herbs and lemon wedges if desired.
