Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons coconut oil, melted
- 1 tablespoon honey or maple syrup
Filling:
- 8 ounces reduced-fat cream cheese, softened
- ½ cup plain nonfat Greek yogurt
- â…“ cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened shredded coconut
Topping:
- 2 tablespoons unsweetened shredded coconut (for sprinkling)
Instructions
- Preheat oven and prepare the pan: Preheat the oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper.
- Make the crust: Mix graham cracker crumbs, melted coconut oil, and honey. Press into the pan and bake for 8 minutes.
- Prepare the filling: Beat cream cheese, then add Greek yogurt, honey, egg, vanilla, and shredded coconut. Pour over crust.
- Add topping and bake: Sprinkle remaining coconut over the filling. Bake for 25–28 minutes until set.
- Cool and refrigerate: Let cool, then refrigerate for at least 2 hours before slicing into bars.
