Description

This Slow Cooker Cowboy Casserole is a hearty and comforting dish that is perfect for busy weeknights. Made with ground beef, beans, corn, and tater tots, it’s a satisfying meal the whole family will love.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced

Casserole:

  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • ½ cup milk
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 3 cups frozen tater tots
  • 1 ½ cups shredded cheddar cheese

Instructions

  1. Cook Ground Beef Mixture: In a skillet, cook ground beef, onion, and garlic until beef is browned and onion is soft. Drain excess fat and transfer to the slow cooker.
  2. Combine Ingredients: Add kidney beans, corn, cream of mushroom soup, milk, diced tomatoes, smoked paprika, chili powder, salt, and pepper. Mix well.
  3. Add Tater Tots: Place an even layer of frozen tater tots on top of the mixture.
  4. Cook: Cover and cook on low for 5–6 hours or on high for 2 ½–3 hours.
  5. Melt Cheese: In the last 15 minutes of cooking, sprinkle shredded cheddar cheese over the top and let it melt.
  6. Serve: Serve warm and enjoy!
