Ground Beef Mixture:
- 1 pound ground beef
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
Casserole:
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10.5 ounces) condensed cream of mushroom soup
- ½ cup milk
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 3 cups frozen tater tots
- 1 ½ cups shredded cheddar cheese
Instructions
- Cook Ground Beef Mixture: In a skillet, cook ground beef, onion, and garlic until beef is browned and onion is soft. Drain excess fat and transfer to the slow cooker.
- Combine Ingredients: Add kidney beans, corn, cream of mushroom soup, milk, diced tomatoes, smoked paprika, chili powder, salt, and pepper. Mix well.
- Add Tater Tots: Place an even layer of frozen tater tots on top of the mixture.
- Cook: Cover and cook on low for 5–6 hours or on high for 2 ½–3 hours.
- Melt Cheese: In the last 15 minutes of cooking, sprinkle shredded cheddar cheese over the top and let it melt.
- Serve: Serve warm and enjoy!
Notes
- For extra flavor, consider adding cooked bacon bits or sliced jalapeños.
- You can use black beans or pinto beans as a substitute for kidney beans.
