  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 garlic cloves, minced
  • 1 cup uncooked long grain rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 1/2 cups chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh cilantro and lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned. Add onion, bell pepper, and garlic; cook until softened.
  2. Stir in rice, black beans, tomatoes, broth, spices. Bring to a boil, then cover and simmer until rice is tender.
  3. Add frozen corn and cook until heated through. Sprinkle with cheese, cover, and let sit off heat to melt. Garnish with cilantro and lime before serving.
