This flavorful recipe features spiced salmon fillets served with cheesy asparagus and garlic herb roasted potatoes, creating a delicious and well-balanced meal.

For the salmon:

  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • lemon wedges for serving

For the cheesy asparagus:

  • 1 lb fresh asparagus, trimmed
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella or Parmesan cheese

For the garlic herb potatoes:

  • 1 1/2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian herbs or chopped fresh rosemary and thyme
  • salt and black pepper to taste
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. For the potatoes: Toss the halved baby potatoes with olive oil, minced garlic, herbs, salt, and pepper. Roast at 400°F for 25–30 minutes.
  2. For the asparagus: Toss asparagus with olive oil, salt, and pepper. Roast for the last 10 minutes of potato cooking time. Sprinkle with cheese for the final 3–5 minutes.
  3. For the salmon: Rub fillets with olive oil and spices. Sear, then bake at 400°F for 6–8 minutes.
  4. Plate the salmon with cheesy asparagus and roasted potatoes. Serve with lemon wedges and parsley.

Notes

  • To save time, roast the asparagus and potatoes on the same tray if space allows.
  • You can use any firm white fish or chicken breast as a substitute for salmon.
