			Main Ingredients
- 1 pound shrimp (deveined and peeled)
 - 1 bell pepper (any color), cut into chunks
 - 1 zucchini, cut into chunks
 - 1/2 red onion, cut into chunks
 - 1/2 cup pineapple chunks (optional)

For the Marinade
- Juice of 1 lime
 - 1 tablespoon chili powder
 - 1 teaspoon cumin
 - 1/2 teaspoon garlic powder
 - 2 tablespoons olive oil

Instructions
- Prepare the marinade: In a bowl, whisk together lime juice, chili powder, cumin, garlic powder, and olive oil thoroughly to create a flavorful marinade.
 - Marinate the shrimp and veggies: Add the shrimp and chopped vegetables to the marinade, tossing everything well to coat evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse, or up to 2 hours for extra taste.
 - Preheat grill or oven: If using a grill, preheat it to medium-high heat. Alternatively, set your oven to 400°F (200°C) if you prefer baking.
 - Assemble the skewers: Thread the marinated shrimp and veggies onto skewers, alternating between shrimp, bell pepper, zucchini, red onion, and pineapple chunks if using. This ensures even cooking and a good mix of flavors in each bite.
 - Cook the skewers: Place the skewers on the hot grill and cook for 5-7 minutes per side, turning once, until the shrimp are opaque and cooked through and the vegetables are tender. If baking, place skewers on a baking sheet and cook for 10-12 minutes until done.
 - Serve: Serve the cooked skewers over rice, quinoa, or a bed of fresh greens to make a complete and satisfying meal.

Notes
- Soaking wooden skewers in water for 30 minutes before grilling prevents them from burning.
 - Adjust the chili powder amount according to your preferred spice level.
 - For extra flavor, garnish with chopped fresh cilantro or a squeeze of lime before serving.
 - Can substitute shrimp with chicken or tofu for a variation.
 - Grilling adds a smoky flavor, but baking is a great alternative if you don’t have access to a grill.
