Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the pie.
  2. Sauté Onions and Spinach: In a skillet over medium heat, heat the olive oil and sauté the finely chopped onion until soft and translucent, about 5 minutes. Add the fresh spinach and cook until wilted, or if using frozen spinach, stir in the thawed and squeezed-dry spinach. Remove from heat and allow the mixture to cool slightly.
  3. Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk or half-and-half, garlic powder, salt, and black pepper until smooth and combined.
  4. Mix in Cheeses and Spinach: Stir the shredded mozzarella, crumbled feta, grated Parmesan, and the sautéed spinach mixture into the egg mixture ensuring everything is evenly combined.
  5. Assemble in Pie Crust: Place the unbaked 9-inch pie crust into a pie dish. Pour the filling evenly into the pie crust, spreading it out smoothly.
