Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of the pasta water.
  2. Prepare the sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes and sauté for about 30 seconds until fragrant.
  3. Add tomatoes and seasonings: Add diced tomatoes (with juices), tomato paste, salt, pepper, and Italian seasoning. Stir and simmer for 5 to 7 minutes, letting the sauce thicken slightly.
  4. Cook the spinach: Add the fresh baby spinach to the sauce and cook until wilted, about 2 minutes.
  5. Combine pasta and sauce: Add the cooked pasta to the skillet and toss to combine, adding reserved pasta water as needed to loosen the sauce.
  6. Finish with cheese: Stir in Parmesan cheese and adjust seasoning to taste.
  7. Serve: Serve warm with extra Parmesan cheese if desired.
