Ingredients
Scale
Strawberries
- 2 pounds (900g) fresh strawberries, hulled and halved
- ⅓ cup of granulated sugar
Batter
- 2¼ cups (270g) all-purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon kosher salt
- ⅔ cup granulated sugar
- 1¼ cups (300ml) milk
- 2 teaspoons vanilla extract
Butter
- 9 tablespoons (120g) unsalted butter
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature for baking the cobbler.
- Macerate Strawberries: In a large bowl, combine hulled and halved strawberries with ⅓ cup sugar. Stir well and let them sit so they release their juices and become sweetened.
- Melt Butter: Place 9 tablespoons of unsalted butter in a 13×9-inch baking dish and put it in the preheated oven for about 10 minutes until the butter is fully melted.
- Prepare Batter: While the butter melts, whisk together flour, baking powder, salt, and remaining ⅔ cup sugar in a medium bowl. Add milk and vanilla extract, stirring gently until just combined without overmixing.
- Assemble Cobbler: Carefully remove the baking dish with melted butter from the oven. Pour the batter over the melted butter without stirring. Spoon the macerated strawberries over the batter, leaving excess liquid behind.
- Bake: Bake the cobbler in the oven for 55 to 60 minutes until the batter turns golden brown and strawberry juices bubble around the edges.
- Cool and Serve: Let the cobbler cool for 15 minutes to allow the juices to set. Serve warm, optionally with vanilla ice cream for added indulgence.
Notes
- Use ripe, fresh strawberries for the best flavor and juiciness.
- Do not stir the batter and strawberries after assembling to allow the batter to rise through the fruit naturally.
- Letting the cobbler cool slightly helps the filling thicken and makes serving easier.
- For a richer flavor, try adding a pinch of cinnamon or nutmeg to the batter.
- Leftovers can be refrigerated for up to 3 days; reheat gently before serving.
