Mochi Dough:

  • 1 cup sweet rice flour (mochiko)
  • 1/4 cup granulated sugar
  • 3/4 cup water

Additional Ingredients:

  • 1/4 cup cornstarch (for dusting)
  • 6 fresh strawberries (hulled)
  • 6 small pieces of sweet red bean paste or white bean paste (about 1 tablespoon each)

Instructions

  1. Prepare Strawberries: Wash and hull strawberries. Wrap each one in a piece of red or white bean paste.
  2. Make Mochi Dough: Combine sweet rice flour, sugar, and water in a microwave-safe bowl. Microwave in intervals until dough is thick.
  3. Shape Mochi: Dust surface with cornstarch. Divide and shape dough into pieces. Encase each strawberry with mochi.
  4. Chill and Serve: Place mochi in liners or on a tray, seam-side down. Chill before serving.
