Description

A refreshing twist on classic tiramisu, this Strawberry Tiramisu layers juicy macerated strawberries, creamy mascarpone mixture, and delicate ladyfinger cookies soaked in orange juice or strawberry syrup, creating a no-bake dessert perfect for summer or any occasion.

Ingredients

Scale

Strawberries

  • 1 pound fresh strawberries, hulled and sliced
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice

Mascarpone Cream

  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Other

  • 24 to 30 ladyfinger cookies (savoiardi)
  • 1/2 cup orange juice or strawberry syrup for dipping
  • Additional sliced strawberries and mint for garnish (optional)

Instructions

  1. Macerate the Strawberries: In a medium bowl, toss the sliced strawberries with granulated sugar and lemon juice. Let them sit for 15 to 20 minutes until juicy and slightly softened, enhancing their natural sweetness.
  2. Prepare the Mascarpone Mixture: In another bowl, beat the mascarpone cheese with powdered sugar and vanilla extract until the mixture is smooth and creamy. In a separate chilled bowl, whip the heavy cream to stiff peaks, then gently fold it into the mascarpone mixture, maintaining the fluffy texture.
  3. Assemble the Tiramisu Layers: Briefly dip each ladyfinger into the orange juice or strawberry syrup—avoid soaking to prevent sogginess. Arrange a layer of dipped ladyfingers at the bottom of an 8×8-inch dish.
  4. Layer the Cream and Strawberries: Spread half of the mascarpone cream over the ladyfingers, then spoon half of the macerated strawberries evenly on top.
  5. Repeat the Layers: Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture and the rest of the strawberries, smoothing out the top layer.
  6. Chill and Serve: Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld together. Just before serving, garnish with extra sliced strawberries and fresh mint leaves if desired.

Notes

  • You can substitute strawberry jam thinned with water or liqueur for the dipping syrup for extra flavor.
  • For an adult twist, add a splash of strawberry liqueur or limoncello to the dipping liquid.
  • This dessert is best made ahead to let the flavors fully develop and the dessert to set properly.
