Spaghetti Salad:

  • 12 ounces spaghetti noodles, broken in half
  • 1 ½ cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ½ red onion, thinly sliced
  • ¾ cup black olives, sliced
  • 1 cup Italian salami or pepperoni, cut into strips or small chunks
  • 1 cup shredded or cubed mozzarella cheese
  • 2 tablespoons chopped fresh parsley or basil (optional)

Italian Dressing:

  • ¾ cup zesty Italian dressing
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the Spaghetti: Cook spaghetti noodles according to package directions until al dente. Drain and rinse under cold water.
  2. Prepare the Salad: In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, salami or pepperoni, mozzarella, and fresh herbs.
