  • 2 tbsp. unsalted butter, cut into 4 pieces
  • 4 sprigs thyme
  • 2 cloves garlic, crushed and cut in half

For the Shrimp and Sauce

  • 1 lb. jumbo shrimp (21 to 25 count), peeled and deveined, tails off
  • 2 tbsp. olive oil, divided
  • 1/2 tsp. paprika
  • 1/2 tsp. kosher salt, plus more to taste
  • 1/4 cup unsalted butter, divided
  • 4 cloves garlic, finely chopped
  • 1 tsp. finely chopped fresh thyme
  • 1 tsp. lemon zest
  • 1/4 tsp. ground black pepper
  • 1/2 cup dry white wine
  • 1 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp. fresh lemon juice, plus more to taste
  • 2 tbsp. chopped fresh parsley


Instructions

  1. Prepare the Steaks: Remove steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry thoroughly with paper towels to remove excess moisture, which helps in forming a good sear. Season all sides generously with kosher salt and ground black pepper.
  2. Sear the Steaks: Heat a large cast-iron skillet over high heat until very hot. Add the olive oil and heat until it shimmers. Place the steaks in the skillet and sear without moving until a dark crust forms, about 2 minutes per side. Add one piece of butter, one sprig of thyme, and one piece of crushed garlic on top of each steak.
  3. Finish Cooking in the Oven: Transfer the skillet to the preheated 400°F oven. Cook the steaks for an additional 4 to 10 minutes depending on your desired level of doneness; 5 to 6 minutes will yield medium-rare. Use a meat thermometer for precision if desired.

  7. Make the Creamy Sauce: Melt 2 tablespoons of butter in the skillet over medium heat. Add finely chopped garlic, fresh thyme, lemon zest, and black pepper. Cook for about 1 minute until fragrant. Pour in the dry white wine and simmer for 2 minutes to reduce slightly.
