Main Sloppy Joe Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Assembly:

  • 1 (10-ounce) bag tortilla chips
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sliced green onions
  • 1/4 cup sliced jalapeños (optional)
  • Sour cream and chopped cilantro for garnish (optional)

Instructions

  1. Preheat oven and prepare sloppy joe mixture: Preheat oven to 375°F (190°C). In a skillet, sauté onion in olive oil until softened. Add garlic, then brown ground beef. Drain fat and add ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, salt, and pepper. Simmer for 5–7 minutes.
  2. Assemble nachos: Spread half of the tortilla chips on a baking sheet. Top with half of the meat mixture and half of the cheeses. Repeat layers. Bake for 8–10 minutes until cheese is melted.
  3. Serve: Garnish with green onions, jalapeños, sour cream, and cilantro. Enjoy immediately.
