Sweet Chili Sauce
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 3/4 cup sweet chili sauce
- 1–2 Tbsp honey

- 3 Tbsp green onions, chopped
Instructions
- Preheat the Oven: Preheat your oven to 375ºF (190ºC) to ensure it’s at the right temperature before baking the chicken and vegetables.
- Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. Place them in a bowl and toss with corn starch, black pepper, salt, and red pepper so that the chicken is evenly coated and seasoned.
- Bake the Chicken: Arrange the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the preheated oven for 20 minutes. Flip the chicken halfway through baking to promote even cooking and browning.
- Make Sweet Chili Sauce: While the chicken bakes, melt the butter in a saucepan over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 to 2 minutes. Stir in the sweet chili sauce and honey, and allow the sauce to simmer for a few minutes to blend the flavors together well.
- Combine: Once the chicken and vegetables are cooked, pour the sweet chili sauce over them. Toss everything together thoroughly so the chicken pieces are nicely coated with the sauce.
