Instructions

  1. Preheat the Oven: Preheat your oven to 375ºF (190ºC) to ensure it’s at the right temperature before baking the chicken and vegetables.
  2. Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. Place them in a bowl and toss with corn starch, black pepper, salt, and red pepper so that the chicken is evenly coated and seasoned.
  3. Bake the Chicken: Arrange the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the preheated oven for 20 minutes. Flip the chicken halfway through baking to promote even cooking and browning.
  4. Make Sweet Chili Sauce: While the chicken bakes, melt the butter in a saucepan over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 to 2 minutes. Stir in the sweet chili sauce and honey, and allow the sauce to simmer for a few minutes to blend the flavors together well.
