Description

These Taco Ranch Bites are a delicious Tex-Mex appetizer featuring savory ground beef seasoned with taco and ranch flavors, nestled in a crispy crescent roll cup and topped with gooey cheddar cheese and tangy sour cream. Perfect for parties or game day gatherings!

For the beef filling:

  • 1 lb (450g) ground beef
  • 1 tablespoon taco seasoning
  • 1 tablespoon ranch seasoning mix
  • 1 tablespoon tomato paste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions
  • 1–2 tablespoons of water

For the cups:

  • 1 can (8 oz) refrigerated crescent roll dough or biscuit dough
  • cooking spray or oil for greasing
  • optional toppings: extra sour cream, salsa, or chopped jalapeños

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or oil.
  2. Cook the beef: Brown and fully cook the ground beef in a skillet over medium heat. Drain excess fat, then stir in taco seasoning, ranch seasoning, tomato paste, and water. Simmer for 2 minutes, then remove from heat and let cool slightly. Stir in shredded cheese and sour cream until well combined.
  3. Prepare the cups: Roll out the crescent or biscuit dough and cut into 24 equal pieces. Press each piece into the bottom and up the sides of the mini muffin tin cups.
  4. Fill and bake: Spoon the beef mixture evenly into each dough cup. Bake for 12–15 minutes or until the dough is golden and cooked through. Remove from oven and let cool for a few minutes before gently lifting out. Garnish with green onions and serve warm with optional toppings.

  • You can make these ahead and reheat in the oven or air fryer.
