These Taco Ranch Bites are a delicious Tex-Mex appetizer featuring savory ground beef seasoned with taco and ranch flavors, nestled in a crispy crescent roll cup and topped with gooey cheddar cheese and tangy sour cream. Perfect for parties or game day gatherings!

For the beef filling:
- 1 lb (450g) ground beef
- 1 tablespoon taco seasoning
- 1 tablespoon ranch seasoning mix
- 1 tablespoon tomato paste
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
- 1–2 tablespoons of water
For the cups:
- 1 can (8 oz) refrigerated crescent roll dough or biscuit dough
- cooking spray or oil for greasing
- optional toppings: extra sour cream, salsa, or chopped jalapeños
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or oil.
- Cook the beef: Brown and fully cook the ground beef in a skillet over medium heat. Drain excess fat, then stir in taco seasoning, ranch seasoning, tomato paste, and water. Simmer for 2 minutes, then remove from heat and let cool slightly. Stir in shredded cheese and sour cream until well combined.
- Prepare the cups: Roll out the crescent or biscuit dough and cut into 24 equal pieces. Press each piece into the bottom and up the sides of the mini muffin tin cups.
- Fill and bake: Spoon the beef mixture evenly into each dough cup. Bake for 12–15 minutes or until the dough is golden and cooked through. Remove from oven and let cool for a few minutes before gently lifting out. Garnish with green onions and serve warm with optional toppings.

- You can make these ahead and reheat in the oven or air fryer.
