Instructions
- Sear the Beef: In a skillet over medium-high heat, heat the olive oil and sear the beef in batches until browned on all sides, about 2–3 minutes per batch. Transfer the beef to the crockpot.
- Prepare the Stew: Add the chopped onion, garlic, beef broth, Worcestershire sauce, soy sauce, thyme, pepper, and onion soup mix to the crockpot. Stir to combine. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender.
- Thicken the Sauce: Thirty minutes before serving, stir in the cornstarch slurry to thicken the sauce.
- Cook the Noodles: Cook the egg noodles according to package directions.
- Serve: Serve the beef tips over the noodles and garnish with fresh parsley if desired.
