Chuck Roast:
- 1.5–2 kg (3–4 lbs) chuck roast
- Salt and black pepper to taste
- 1 tablespoon olive oil
Sauce:
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 can (100g) chipotle peppers in adobo sauce
- 1 tablespoon tomato paste
- 1 tablespoon apple cider vinegar
- 1 tablespoon smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 1/2 cups beef broth
- Juice of 1 lime
For Serving:
- Corn or flour tortillas
- Chopped onions
- Fresh cilantro
- Lime wedges
- Crumbled cotija cheese
Instructions
- Season the Chuck Roast: Generously season the chuck roast with salt and pepper.
- Sear the Roast: Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned. Remove and set aside.
- Prepare the Sauce: In the same pot, cook onion until softened. Add garlic, chipotle peppers, tomato paste, vinegar, spices, broth, and lime juice. Return roast to pot, cover, and simmer for 3–4 hours.
- Shred the Beef: Use forks to shred the beef in the pot and coat it in the sauce.
- Assemble Tacos: Warm tortillas and fill with shredded beef. Top with onions, cilantro, cotija cheese, and a squeeze of lime.
Notes
- This recipe is slow cooker-friendly. Cook on low for 8 hours or high for 4–5 hours.
- For crispy tacos, fill tortillas with shredded meat and sear in a skillet with a bit of oil until golden.
