Chuck Roast:

  • 1.5–2 kg (3–4 lbs) chuck roast
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Sauce:

  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 can (100g) chipotle peppers in adobo sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 1/2 cups beef broth
  • Juice of 1 lime

For Serving:

  • Corn or flour tortillas
  • Chopped onions
  • Fresh cilantro
  • Lime wedges
  • Crumbled cotija cheese

Instructions

  1. Season the Chuck Roast: Generously season the chuck roast with salt and pepper.
  2. Sear the Roast: Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned. Remove and set aside.
  3. Prepare the Sauce: In the same pot, cook onion until softened. Add garlic, chipotle peppers, tomato paste, vinegar, spices, broth, and lime juice. Return roast to pot, cover, and simmer for 3–4 hours.
  4. Shred the Beef: Use forks to shred the beef in the pot and coat it in the sauce.
  5. Assemble Tacos: Warm tortillas and fill with shredded beef. Top with onions, cilantro, cotija cheese, and a squeeze of lime.

Notes

  • This recipe is slow cooker-friendly. Cook on low for 8 hours or high for 4–5 hours.
  • For crispy tacos, fill tortillas with shredded meat and sear in a skillet with a bit of oil until golden.
