Instructions

  2. Prepare the Whipped Feta: While the strawberries are roasting, combine the feta cheese, plain Greek yogurt, olive oil, honey, and lemon juice in a food processor or blender. Blend until the mixture becomes very smooth and creamy, scraping down the sides as necessary to incorporate all ingredients evenly.
  3. Assemble the Dip: Spread the whipped feta mixture onto a serving plate or shallow bowl evenly. Spoon the roasted strawberries and any juices from the pan on top of the feta. Garnish with chopped fresh mint, crushed pistachios, and a light drizzle of honey or olive oil if you like.
