Instructions
- Roast the Strawberries: Preheat your oven to 375°F (190°C). Toss the hulled and halved strawberries with maple syrup (or honey), balsamic vinegar, and a pinch of salt on a parchment-lined baking sheet. Roast for 20–25 minutes until the strawberries are soft and jammy. Allow them to cool slightly.
- Prepare the Whipped Feta: While the strawberries are roasting, combine the feta cheese, plain Greek yogurt, olive oil, honey, and lemon juice in a food processor or blender. Blend until the mixture becomes very smooth and creamy, scraping down the sides as necessary to incorporate all ingredients evenly.
- Assemble the Dip: Spread the whipped feta mixture onto a serving plate or shallow bowl evenly. Spoon the roasted strawberries and any juices from the pan on top of the feta. Garnish with chopped fresh mint, crushed pistachios, and a light drizzle of honey or olive oil if you like.
- Serve: Pair the dip with toasted bread, pita chips, or fresh vegetables for dipping. Enjoy immediately for the best flavor and texture.
