For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- Make the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan and bake for 8 minutes. Let cool.
- Prepare the Filling: Whisk together sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth. Pour over the crust.
- Bake: Bake for 15–18 minutes until set. Cool, then refrigerate for at least 2 hours.
- Serve: Slice into squares and dust with powdered sugar if desired.
Notes
- For a firmer crust, chill before adding the filling.
- Best served chilled and can be made up to 2 days ahead.
